FAQ & Help

What is a wine margin calculator?

A wine margin calculator is a simple tool you use with your real numbers: what you pay for a bottle or glass and what you charge on the menu.

It turns those inputs into gross margin and a margin percentage so you can compare wines and policies without guessing.

Our calculators follow US restaurant practice: menu prices are listed before sales tax, which is added on top at checkout.

Purchase costs are what your distributor invoices you, so your margin reflects what stays with you after the wine cost.

What is margin?

For each sale, think of margin as what is left after you strip out what does not belong to your operating margin on that wine.

Wine margin = menu price → minus purchase cost.

In other words: guests pay the menu price, plus sales tax and usually a tip.

Sales tax goes to your state and city and the tip goes to your staff, so neither touches your margin. Rates vary by state and city; check yours. You subtract your bottle or pour cost from the menu price, and that is it.

What remains is the gross profit from that wine before overhead such as payroll, rent, and wastage, which you still must cover from margin across the business.

Margin percentage is expressed on the menu price: it tells you how much of each dollar of wine revenue stays as gross profit at the line-item level. Its mirror image is pour cost: a 25% pour cost is a 75% margin.

How much margin do you need?

There is no universal magic percentage: your fixed costs, volume, and positioning decide what wine must contribute to the P&L.

You have to know this number—or work it out deliberately—otherwise pricing becomes guesswork.

Define a target wine margin that fits your restaurant, then use the calculator to check whether individual list prices and by-the-glass pours actually hit it.

When they do not, you adjust price, cost, pour size, or placement—not hope.

Where does the markup multiplier fit in?

Markup multipliers are a blunt tool, and a dangerous one if used alone.

They are simply the ratio between your menu price and your wholesale cost.

Many think you can set wine list prices just by multiplying cost by a fixed number, like 3× wholesale on every bottle.

You cannot build a high-performing wine list with a markup multiplier. Apply it blindly and you will inevitably damage your list.

Why? Because a flat multiplier ignores guest perception, retail prices a guest can check on their phone, differing fixed costs, and the price sensitivity of different wines.

Premium bottles, low-cost wines, and everything in between demand nuance, not pricing with a multiplication.

Instead, focus on your required margin (after wine cost) and your business reality.

Use the calculator above to get it right for every wine, not just as a multiple.
